Skinny Chicken Salad Lettuce Wrap Recipe

After providing a series of recipes for Horse Show Week, I decided I would continue sharing some each week.  These will be recipes with the equestrian lifestyle in mind, and hopefully, pretty easy to do!  We are fast paced and on the go, and if you’re anything like me, you need to be able to grab something and head to the barn.  There is no time to waste getting to the barn!  That’s why I liked this recipe: Skinny Chicken Salad Lettuce Wrap.  You can even share it with your horse!  I’m sure he would appreciate it if you slipped him an apple bite!




  • 1/2 cup chopped chicken
  • 3 Tbsp Fuji apples chopped
  • 2 Tbsp red grapes chopped
  • 2 tsp honey
  • 2 Tbsp almond butter

Mix and wrap in a Romaine lettuce leaf.

    tried this recipe actually I was surprised at how good it tasted . Just a question though if u are clumsy like me what’s the easiest way to wrap the mixture. I found the leaves a little difficult to wrap with .

      Hi! Thanks for sharing! You could always use a whole wheat or spinach wrap too (if you want to keep it healthy!). That would probably be easier than just the leaves.
